Pangasius

PANGASIUS is not a familiar name to all shoppers, who may have encountered it under one of its nicknames “basa.” Originally native to Vietnam’s Mekong Delta, pangasius is now farmed in a number of Asian countries and in Texas. American cooks can best regard it as a catfish-cousin, suitable to any recipes calling for white fish filets. Since it is new to some customers, we include a recipe adapted from its Asian origins. Our pangasius is farm-raised in China. Priced per pound.
